What drives the choices of winemakers? On the one side, the aesthetic approach follows the fleeting trends that affect the taste of the public. On the other end, the ethical approach clings to the mantra of natural production and organic certification at every cost.
“Heretical” winemakers prefer to shun both extremes, focusing on their choices and needs, pursuing taste and safeguarding traditional know-how and artisan winemaking, from the vineyard to the cellar.
