The B side of food
Every year, in Europe we throw away around one third of the food that we produce. 179 kilos of waste, a huge food avalanche which inevitably produces environmental, economic and social consequences.
Urged by this alarming fact, some years ago Lisa Casali, an environmental scientist and an amateur chef, launched a food blog to suggest her own solution to the problem. After all, it doesn’t take too much to try and stop this catastrophe.
The first thing that we can do is changing our habits, i.e. finding a way to use what we usually throw away. Stalks, peels, skins, rinds, cores, and fishbones… In other words, the “B side” of food, everything that’s left after you’ve used the most “noble” parts.
Lisa faced this challenge with sincere passion, testing unique, affordable, tasty and healthy recipes – for often the best nourishing substances are contained in the parts that we waste.
Today, that blog – which was born at first as an experimental workshop – has become a book filled with gorgeous images, nice ideas and recipes that range from snacks to main courses.
Here are some examples: pods croquettes with sesam seeds, orange skin risotto, leek and Parmesan crusts cocotte, potato salad with radish leaves…
A whole section of the book is devoted to energy saving, featuring easy and useful tips like recycling cooking water or choosing the right pot, and unusual cooking methods such as dishwasher cooking.
