Italian Style Tapas
Part pizza, part sandwich (tramezzino) and part small-bite sized portion of a classic Roman dish. In one word, trapizzino, a creation of Rome’s most beloved pizzaiolo, Stefano Callegari, the man behind the great success of well-known pizzeria Sforno.
The formula is fresh but simple: take the traditionally white Roman pizza and fill it with some of the best local delicacies – braised oxtail, meatballs, chicken cacciatora, cuttlefish & peas, picchiapò beef stew…
Just a small portion – like a Spanish tapa – perfectly filling a closed triangle of pan baked pizza dough, for a short journey into the tastes of traditional Roman cuisine that won’t have you unbottoning your pants.
