Ingredients coming from very different lands and culinary traditions, freshly mixed into a brand new dish or menu. In other words, fusion, a racking passion of the Nineties.

 

Twenty years later, what used to be a trend has become quite a consolidated habit, mostly because of the influence of so-called ethnic cuisines – especially the Oriental ones, from which the Western chefs often draw inspiration to make their dishes more interesting, spiced and unique.

 

Today, fusion is not an experimental or cutting edge choice, but a widely shared attitude that gives birth to many unusual culinary creations. Every big city has its own fusion restaurants, where the food, the ambience and the style feature a graceful mix of different influences. Here are a few nice examples.

 

 

 

Komomoto, Barcelona

This Peruvian-Japanese taberna in the Borne serves dishes that mix ingredients and techniques from both nations. Try the Japanese tempura with corn, a classic Peruvian ingredient.

Nomiya, Munich

Did you think that Bavaria and Japan were two worlds apart? Well, think again, because at Nomiya you can eat sushi and drink artisan Bavarian beers, surrounded by Japanese art works that go hand in hand with the old-fashioned Bavarian decoration.

Take the culinary tradition of Peru and Japan and add a touch of  Thai and Chinese flavors. At Osaka, the creative process is costantly evolving and gives birth to strange mixes such as the classic Peruvian chevichitos served in Oriental spoons.
